Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive approach to food and pharmaceutical safety. HACCP focuses on preventing physical, chemical, and biological hazards by implementing Critical Control Points (CCP’s) rather than finished product inspection.
HACCP is used in the food industry to reduce or eliminate the risk of the hazards and is used at all stages of food production and preparation, including production, packaging and distribution.
Examples of CCP’s are weight thresholds during manufacturing, testing of ingredients for chemical residue, and inspection for metal contaminants.
